Beef…it’s what’s for dinner!
John, one of the men on staff here at school has a few cows that he keeps in a pasture on campus. He recently slaughtered three of them, quartered them, and hung them in the fridge in the dining hall kitchen. He gave two of the cows to the students. For the last couple of days I have had the opportunity to learn some butchery. The only cut I really learned is what John calls a “goober,” which is any chunk of meat. Since all the meat was going to go to ground beef we just had to cut it off the bones…in goobers. After cleaning the bones we ground up the meat. Two cows sure make a lot of ground beef! When we had finished grinding the meat, we went and distributed it to the students; there was enough to give every adult about three pounds of ground beef! I wish those two cows could have been there to see all the happy people. It is wonderful to witness how God is providing for us and the other students here in some unexpected ways!

Thank you so much for including us in what is going on in your life. I forwarded your email on to your cousins Erich and Travis. I figured they would really appreciate Ryan’s hard working learning to butcher. I think they could both teach you how to “butcher” a salmon fillet this summer. We spent a week in Juneau with Erich and Sarah and tried to fillet our own fish…it’s definately harder than it looks.
